Sela's Yankee Bagels & Inspiration

Sela and Co are serious bagel enthusiasts who were lucky enough to regularly eat some of the most famous bagel shops in the world: Russ & Daughters (NYC), Ess-A-Bagel (NYC), Black Seed Bagel (NYC), Max & Benny's (Chicago) and Once Upon A Bagel (Chicago).

When Sela set out to create our Yankee Bagel, she wanted an East Coast-style bagel but with a few tweaks: a golden snappy crust (but not overly browned), water poached, egg washed, high quality barley added and proofed over 24 hours to let the flavors happen. Baked the real deal way too: first on cedar wood bagel boards soaked in cold water and then on oven stones with cornmeal to prevent sticking.

The result? A bagel that has a great crust, gorgeous crumb and a chew that really delivers. This is a real bagel, not just bread formed into a ring shape, so there's some truly nuanced and complex flavors in there from the proofing. Just the way real East Coast bagels are made and taste. And it will still be great two and even three days after it's delivered with no added preservatives.
